- - - - - Pineapple/Salami picks
1 pkg hard salami luncheon meat
1 can pineapple chunks
Decorator/party picks
This sounds strange, but is one of my most requested recipes. Take the hard salami out of the package and
cut in half, right down the middle. Separate each of the pieces. You'll have about 50 pieces, minus any you
eat. Fold the piece into a triangle, put on the pick, and then put a piece of pineapple. All done.
Ham and cheese chunks (about 2/3" wide) or Ham luncheon meat & cheese chunks
Jar of cocktail onions
Jar of pimento stuffed green olives
Decorator/party picks
Just starting putting them on the picks in any combination. Ham & cheese. Ham & olive. Cheese & olive.
Cheese & onion. Cheese, ham, and olive. Whatever you want. You can also use ham luncheon meat.
Get the rectangular shaped ones and slice them in strips, down the short side. Wrap a piece around an
olive, put it on the pick and add the cheese, or the onion, or both.
- - - - - Swedish Meatballs
15 lbs. lean hamburger meat
4 onions, chopped
15 eggs
8 cups minute rice (uncooked)
10 small cans chopped black olives
Salt & pepper
6-7 large cans Cream of Mushroom Soup
(or more)
Water
Mix all but the soup together, form into small meatballs. Place into a few huge baking pans. Mix 2 cans water
with the soup and mix well. Pour over the meatballs and stir it all up. Be careful not the break apart the balls.
Use more soup if you have to, but make sure you cover the meatballs. Bake in 350 degree oven for about
2-3 hours, or until done. Should not be pink inside if you split one of the balls in half. Serves 100 or so.
Note: To make less meatballs, just decrease the ingredients. (1 lb. hamburger, 1/4 onion, 1 egg, 1/2 cup rice,
1 small can chopped olives, 2 regular cans soup. Will serve 4-5 as a regular meal and will cook in about 30-45
minutes.
- - - - - Little Smokies in a blanket
1 package of the cocktail sausages
1 can of crescent rolls
Unroll the crescent rolls. Cut each piece into 5 or 6 pieces, triangular shaped. Wrap each sausage in a
piece of the roll. Bake according to the crescent roll directions. I serve them with honey mustard. These are
extremely popular, however, they can be a problem. The only time I serve them is if there's an oven at the
reception, because they really are best fresh out of the oven.
Okay, we just cheat here. Buy a box at the grocery store or a wholesale club. Display them on a tray with
a bed of lettuce leaves. We're cheap, but we're not stupid. Some things we just buy!
Bonus Recipe:
X-Tra Easy Au Gratin Potatoes
6 large peeled potatoes
(sliced about 1/8" thick)
1 can Campbell's Cheddar Cheese Soup
(undiluted)
1/2 cup melted butter or margarine
1 cup shredded mild cheddar cheese
Salt/pepper to taste
Prepare the potatoes and put them into a bowl. Stir in the melted butter, the cheese soup, and the shredded cheese.
Put all into a greased dish. I like to use a "flat" casserole dish or something similar. An 8x8 cake pan would work good.
Bake at 400 degrees until done, which will take about 45-60 mins, depending on how thick you slice the potatoes. Check it at the 1/2 hour point to see if it's close to done.
