NOTE: Some recipes are not exact measurements--they can't be quantified. Use the mix & taste method.
1 large package Velveeta cheese
2 cans Rotel tomato w/chilis (or substitute another brand)
1 1-lb. package sausage like Owens or Jimmy Dean, use the mild kind, use the original, not herbed

Chunk up the cheese in a large bowl and add in the Rotel. Microwave until completely melted. Stir fairly often.
Crumble up the sausage like hamburger meat and fry it until well done. Make sure the pieces are fairly small.
Drain. When the cheese is melted, add the sausage and stir well. Serve with tortilla chips. Put in a crock pot
to serve. You can also use hamburger meat but I don't think it's as good.

1 small jar marshmallow cream
1 8 oz pkg cream cheese, softened
1/8 cup Maraschino cherries, chopped
Little bit of pineapple, crushed or finely chopped

Mix all together. Add a little cherry juice to color it pink and pineapple juice for flavor. If you've made the
pineapple salami picks, save some pineapple and use them, just chop them up fine. Serve with chunks of apple (use a fruit preservative on them--cut up the day of the wedding or they'll brown), cantaloupe, grapes, oranges, and fresh strawberries on the fruit tray. I also add in gummy fruit candy, yogurt covered pretzels, and chocolate covered nuts.
1 8 oz pkg cream cheese, softened
1 small can chopped black olives
Small amount of chopped onion (I prefer to use the dried kind, soaked in water and drained)
Small amount of milk to thin the mixture
Salt to taste--use a little more than normal

Mix all together. Serve with vegetables. Best with carrots, celery, sliced bell peppers, and cherry tomatoes.
Again, that combination is a pretty display. In a pinch, you can use onion salt, but it's not quite as good.
1 large package cocktail smokies
1 large bottle K-C Masterpiece barbecue sauce
1 small bottle K-C Masterpiece Hickory or Hickory Honey sauce

Combine all and microwave till hot. Believe it or not, this is probably my most-requested recipe. Prepare
the day before, then at the reception, keep it warm in a crockpot.
2 stalks celery
1 8-oz pkg cream cheese, softened
1 can corned beef
Sauerkraut juice

Cut the celery stalks into pieces. One stalk will get you about 3 pieces. If they're too big, cut them lengthwise.
It's better to leave a groove in them for filling, though. Mix the rest and put on the celery. I use a pastry
bag from the cake decorating supplies with a decorator tip on it. It's easier. This recipe for sure you have
to taste to get right on the juice. You want the sour kind so the mixture has a tang to it. Add enough to
thin, but you don't want to get it too thin, it has to hold together in the celery.

Bonus Recipe:

Lemon-Thyme Roasted Chicken

4 Chicken Breasts

4 potatoes, cleaned and cut into wedges

1/2 cup butter or margarine, melted

1/2 cup lemon juice

Thyme

Spray/grease a 9x13 cake pan. Put the chicken and potatoes into the pan. Stir the lemon juice and butter together. Pour over the chicken and potatoes. Sprinkle Thyme flakes over the whole thing.

Bake uncovered at 375 degrees for about 30-45 minutes. Instead of the breasts, you can use tender strips. That's why I use. Cooks faster and has very little fat.

This is one of our favorite recipes. Just make sure you have enough of the lemon juice/butter combination to cover it all. You'll be amazed at how good lemon flavored potatoes are!
